Sugar should matter to us: from its industrial origin in plantation slavery, to its role as an energy booster during the industrial revolution and from our own nostalgic childhood memories to its status as a major threat to public health in the modern era.
Sugar is a cultural prop, which reflects numerous sociocultural layers of history and fluctuations of power dynamics. Our perspective on sugar has always been influenced and distorted by criteria of “contemporary” society.
